The authentic recipe of the “Pesto alla Genovese” says: fresh Ligurian basil, olive oil, garlic, sea salt, pine-nuts, pecorino and somebody says even Parmigiano cheese. Pesto comes from the Italian word pestare which means to pound the ingredients with a woo pestle into a marble mortar (from Carrara).
